Sweet Potato Fritters (as cooked today on instagram)
100g quinoa
olive oil to fry
400g sweet potatoes, grated
3 garlic, finely grated
2 tsp ground cumin and coriander
small bunch of coriander or use dill
finely grated zest and juice of lemon
2 eggs
50g plain flour
1/2 tsp baking powder
feta is also nice, to serve
hot sauce is nice, to serve
yogurt, to serve
Cook quinoa as per instructions on the packet, about 10 mins, drain and cool. Fry off sweet potato, garlic and spices until softened, 5 or 8 mins over moderate heat. Remove from heat, drain to cool. In a bowl beat eggs, cooked cooled sweet potato mix, quinoa, 1/2 herbs, lemon zest, then mix in flour and baking powder. Fry spoonfuls of the fritter mix in spot of oil for 3 - 4 minutes over hot heat on each side until crisp. Serve with lemon wedges, remaining coriander, plain yogurt and hot sauce, if you like?
