The CLUB in a Club Sandwich stands for Chicken, Lettuce Under Bacon – did you know that? I’ll be honest, I didn’t until about a week ago. Simple genius. This park picnic recipe takes that classic combination and gives it a twist: the Caesar Club Sandwich – all the familiar layers, with a creamy, punchy Caesar-style dressing to tie it together


INGREDIENTS

Serves 2


200g cooked chicken, sliced
2 rashers cooked bacon, sliced
3 tbsp mayonnaise
1 tsp Worcestershire sauce
1 tsp Dijon mustard
20g grated Parmesan, plus extra to serve
1 small baby gem lettuce, pulled into leaves
2 rolls, mini ciabatta or baguette sections
Salt and pepper

METHOD

  1. Mix the mayonnaise, Worcestershire sauce, mustard and ½ the Parmesan in a bowl. Season with salt and pepper.

  2. Stir in the chicken and chopped.

  3. Split the rolls and layer with lettuce, then pile on the chicken mix.

  4. Top with the remaining Parmesan, press the rolls closed, and wrap tightly if taking on a picnic.
