Croissant with Cheese, Ham and Dried Fig Butter


A savoury filled croissant is a ludicrously good lunchbox addition. It feels bougie, but it’s essentially just a sandwich. The fig butter is delicious — make extra and slather it on toast in the morning. It keeps well in the fridge for ages.
Salty butter, sweet dried figs — just add ham, cheese, and a handful of rocket, and this ‘sandwich’ is truly tremendous and completely Ivy’s idea, too.

And off she rattled with this as her list of ingredients. These are packed lunch recipes for you to use and riff on, but a heads-up from me — filled savoury croissants are where it’s at, apparently.
INGREDIENTS
Serves 2
2 large croissants
3 dried figs, finely chopped
30g butter, at room temperature
1 tsp Dijon mustard
2 slices of ham (either dry cured or cooked)
2 slices your favourite firm cheese (like Gruyère, Cheddar, Emmental or Red Leicerster )
A handful of rocket or use baby spinach
Coarsely ground black pepper
METHOD
Mash the butter with a fork, then stir in the figs and mustard and season to taste with pepper.
Slice the croissants in half horizontally and spread a layer of fig butter on the top and bottom of each croissant.
Top with the cheese, ham and rocket, season with black pepper and top with the other croissant half.
