Edamame with Miso, Ginger, Sesame and Soy Dipping Sauce


This is a great snack! My freezer is never without a big bag of edamame. likewise, my fridge without some miso. I especially like white miso. This is a doddle to make, you simply mix everything together in a bowl and steam the edamame until piping hot through. Drag the whole pod through the sauce, using your teeth to squeeze out the beans and discard the pod.
Edamame are full of protein and iron and a freezer favourite for me and my family.
INGREDIENTS
Frozen edamame, steamed for around 3 - 4 minutes until piping hot through, sprinkled with a pinch of salt, plenty of cracked black pepper and some sesame seeds, if you like
Dipping Sauce:
1 clove garlic, finely grated
Thumb sized piece of ginger, peeled and finely grated
1 heaped tsp white miso
1 tbsp soy, I used tamari
1 tbsp white vinegar, or use rice vinegar
1 tsp maple syrup, or use runny honey
Big pinch of dried chilli flakes
1 tsp sesame oil
METHOD
Mix all the ingredients for the dipping sauce together. Adjust to taste with any or all of the ingredients listed, we like it super gingery.
Drag the hot edamame pods through the sauce to serve.
