Speedy Huevos Rancheros

Rancher’s Style eggs - a classic egg based dish for good reason. This speedy version means you can quickly riffle through your storecupboard, then supplement with a few fresh ingredients and get cooking right away. You want these onions and peppers quite spicy with the chipotle and cumin, then hurl in a load of cherry tomatoes to cook down super fast, along with some black beans, scramble in your eggs to save on washing up and using an extra pan, essentially speeding up the whole recipe. Serve on warmed tortillas, and scatter over with some crumbled feta cheese and plenty of chopped coriander, plus hot sauce of choice, as ever!


INGREDIENTS

Serves 4 

1 large onion, thinly sliced

3 tbsp olive oil

2 peppers, thinly sliced (a mix of red and green is good)

2 garlic cloves, finely chopped

1 tbsp tomato purée

1–3 tsp chipotle flakes (to taste)

2 tsp ground cumin

Salt and black pepper

400g cherry tomatoes, halved

1 x 400g jarred or canned black or kidney beans, drained and rinsed

4 eggs

1 small bunch fresh coriander, roughly chopped

100g feta, crumbled (or coarsely grated cheddar)

To serve:

Warmed tortillas or wraps

Hot sauce

METHOD

  1. Cook the onion and peppers in the olive oil in a large frying pan over a medium heat for about 5 minutes, stirring occasionally, until softened.

  2. Stir in the garlic, tomato purée, chipotle flakes, cumin, and a little salt and pepper. Cook for 1 minute until fragrant.

  3. Add the cherry tomatoes and 150ml water. Simmer for about 5 minutes until the tomatoes soften.

  4. Stir through the beans and half the coriander. Taste and adjust the seasoning with more salt or chipotle if needed.

  5. Lightly beat the eggs in a bowl, then pour them straight into the pan. Stir gently and continuously for 2-3 minutes, scrambling the eggs into the veg mixture until just set but still creamy.

  6. Take off the heat immediately (the eggs will keep cooking in the residual heat). Scatter over the remaining coriander and the crumbled feta.

  7. Serve the scrambled egg and bean mix on the warmed tortillas with hot sauce on the side.
