Wensleydale, Speedy Carrot Chutney and Walnuts

Simple, and brilliant. This quick carrot chutney works beautifully with the Wensleydsle cheese here in this sandwich. Wensleydale is a cheese that everyone loves, especially I find, children. It has a mild, ever so slightly sweet, citrusy taste with a crumbly texture and honeyed aftertaste. Chopped walnuts, sliced pear and some juicy spinach leaves as a salad leaf, this is a great sandwich, my kids loved it.


INGREDIENTS

Serves 2

100g Wensleydale cheese, sliced or crumbled
1 small apple or pear, thinly sliced
2 handfuls spinach leaves 
1 tbsp chopped walnuts 
4 slices sourdough or seeded bloomer

For the carrot chutney: 
1 large carrot, coarsely grated 
1 tbsp white wine vinegar 1
1 tsp honey 
1 tsp mustard seeds 
Salt and pepper

METHOD

  1. Mix the chutney ingredients and add salt and pepper to taste, leaving to stand for 5 –10 minutes. 

  2. Layer cheese, chutney, spinach, nuts and fruit. Close the sandwich and serve.
